Baked Eggs

This is an excellent breakfast, brunch or supper dish
Below are ingredients and steps for 1 serving/1 person. Just multiply for whatever number of servings you need. I Usually do not make this dish for more than 4 people as it is difficult to put more than 4 ramekins into the oven at one time and have them bake evenly.

Lightly butter a ramekin dish
Place 1 slice of ham or 2 slices of Canadian bacon or prosciutto on bottom of ramekin
Place sautéed mushroom (2 medium size sliced) on top of ham
Spread 1 tablespoon hollandaise sauce over the mushrooms ( buy McCormick’s or Lawry’s packages and just make 1/3 or ½ of the packet as needed so you don’t waste the leftover sauce)
Break 2 eggs on top of the layered ingredients
Sprinkle lightly with salt & pepper
Place in oven and bake at 400 for 14-15 minutes (Do not bake any longer. Even if they look runny they will set in a minute or 2).
Sprinkle with paprika
Garnish with fresh herbs if available


You can also make this dish with cooked sausage.
Instead of mushrooms, sauté peppers and onions
After the eggs are cooked, dot with warmed salsa and sprinkle with your favorite cheese.

Serve baked eggs with fresh fruit, crusty bread, biscuits or corn muffins
